  • 1 package (16 ounces) small pasta shells
For the Sauce
  • 1/2 cup butter, cubed
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground chipotle pepper
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 4 cups 2% milk
  • 2 cups shredded sharp white cheddar cheese
  • 2 cups shredded Manchego or additional white cheddar cheese

Method
 

  1. Cook pasta in a 6-qt. stockpot according to package directions. Drain and return to the pot.
  2. Meanwhile, melt butter in a large saucepan over medium heat. Stir in flour and seasonings until smooth.
  3. Gradually whisk in milk. Bring to a boil, stirring constantly. Cook and stir until thickened, about 6-8 minutes.
  4. Remove from heat. Stir in cheeses until melted. Add the sauce to the pasta and toss to coat.
