Ingredients
  

Wet Ingredients
  • 1/3 cup butter softened
  • 1 1/4 cups white sugar
  • 2 eggs
  • 4 large very ripe bananas mashed
  • 1 cup sour cream
  • 1 tsp vanilla extract
Dry Ingredients
  • 2 1/2 cups all purpose flour or white whole wheat
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup walnuts chopped, optional

  • Large mixing bowl
  • Loaf pans (2)

Method
 

  1. Preheat your oven to 325 degrees F. Generously grease two loaf pans, approximately 8 1/2 x 4 1/2 inches in size.
  2. In a large bowl, cream the butter and sugar together. Add the eggs and mix well.
  3. Add the sour cream, mashed bananas, and vanilla extract. Stir until combined.
  4. Add the flour, salt, cinnamon, and baking soda to the wet ingredients. Stir until just combined. Do not overmix.
  5. Fold in the chopped walnuts, if you are using them.
  6. Divide the batter evenly between the prepared loaf pans.
  7. Bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.

Notes

If you are using smaller bananas, use 5 instead of 4. The riper your bananas are, the better the bread will taste.
