- In a medium saucepan, combine the oats, almond milk, chia seeds, cinnamon, salt, and water. Bring the mixture to a boil.
- Reduce the heat and simmer gently. Stir occasionally until the oatmeal thickens, which takes about 4 to 6 minutes. Fold in the mashed banana and 2 tablespoons of maple syrup.
- Serve the oatmeal topped with sliced banana, chopped pecans, and an extra drizzle of maple syrup if you like.
