- To make the Bang Bang Sauce, combine mayonnaise, Thai sweet chili sauce, honey, and Sriracha in a medium bowl. Stir to combine and set aside.
- For the chicken, combine vegetable oil, paprika, garlic powder, salt, and pepper in a large bowl. Add the chicken cubes and toss to coat.
- Place the coated chicken in a single layer in the air fryer basket. Cook at 400°F for 11-12 minutes, flipping halfway, until the chicken reaches an internal temperature of 165°F. You may need to cook in batches depending on your air fryer size.
- Add ½ cup of the Bang Bang sauce to the cooked chicken in a large bowl and toss to coat.
- To assemble the bowls, divide 1 cup of warmed rice among 4 medium bowls. Add ½ cup of sliced red cabbage, ¼ cup of julienned carrots, and ¼ cup of sliced cucumbers to each bowl. Top with equal portions of sliced avocado and the sauced chicken.
- Garnish each bowl with the remaining Bang Bang sauce, chopped cilantro, and sesame seeds. Serve immediately.
