Ingredients
  

For the Syrup
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 lemon juice
  • 1 red delicious apple cut into chunks, core removed
For the Drink
  • 6 ounces vodka
  • 1/4 cup frozen raspberries
For the Rim
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1 lemon rind remaining

Equipment

  • Small pan
  • blender
  • Cocktail shaker
  • Glasses

Method
 

  1. In a small pan, combine the sugar and the water and simmer for 3 minutes.
  2. In the jar of a blender, add the apple chunks. Pour the hot syrup over the top and add the lemon juice. Puree on high until pretty smooth. Set aside.
  3. Combine the sugar and cinnamon in a small dish. Rub the remaining lemon rind around the edge of the three glasses. Dip them into the cinnamon sugar and set aside.
  4. Strain the apple mixture into a cocktail shaker filled with ice. Add the vodka and frozen raspberries. Shake the cocktail vigorously (you want the raspberries to break up) and then strain into the prepared cocktail glasses.
  5. Serve chilled immediately.

Notes

This recipe is for an alcoholic beverage. For a non-alcoholic version, omit the vodka and consider adding more apple cider or sparkling water.
