- Preheat your oven to 350 degrees F.
- In a medium bowl, combine the 2 cups of flour, baking soda, and salt.
- Place granulated sugar and softened butter in a large bowl. Beat this mixture with a mixer at medium speed until it is fluffy and well blended (about 1 minute).
- Add the mashed banana, eggs, yogurt, and vanilla extract. Beat until the ingredients are blended. Add the flour mixture and beat at low speed just until the batter is moist.
- Place the blueberries in a separate bowl with 1 tablespoon of flour and toss to coat them.
- Gently fold the coated blueberries into the batter. Spoon the batter into an 8 1/2 x 4 1/2-inch loaf pan that has been coated with cooking spray. Press additional blueberries into the top of the batter for decoration.
- Bake for 60-70 minutes or until a wooden pick inserted in the center comes out clean. Cool the bread for 10 minutes in the pan on a wire rack. Remove the bread from the pan and cool completely on the wire rack before slicing.

Notes
You can substitute frozen blueberries for fresh, but be aware that the bread may have blue streaks. Ensure the butter is properly softened for the best texture when creaming with the sugar.
