Ingredients
  

For the Pizza
  • 13.8 ounce tube refrigerated pizza crust
  • 2 Tablespoons olive oil
  • 15 ounce can Libbys Country Sausage Gravy
  • 2 cups shredded Colby jack cheese
  • ½ cup real bacon pieces
For the Eggs
  • 8 large eggs
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • cup milk
  • 2 Tablespoons salted butter

Method
 

  1. Preheat your oven to 425F degrees. Spray a large baking sheet (10"x 15") with nonstick cooking spray.
  2. Spread the pizza crust onto the prepared baking sheet. Stretch it to cover the entire surface. Brush the crust evenly with olive oil. Poke the crust all over with a fork to prevent it from puffing up too much.
  3. Bake the crust for about 7 minutes on the middle rack, until it just begins to turn light brown.
  4. While the crust is baking, prepare the scrambled eggs. In a medium bowl, combine the eggs, salt, pepper, and milk. Whisk well for at least 2 minutes until everything is combined.
  5. Heat a skillet over low to medium heat. Add the butter. Once melted, pour in the egg mixture. Gently scramble the eggs, moving them slowly until they are softly scrambled and fluffy. Turn off the heat.
  6. Remove the partially baked crust from the oven. Spread the sausage gravy evenly over the crust.
  7. Top the sausage gravy with the scrambled eggs. Then, add the shredded cheese over the eggs, followed by the bacon pieces sprinkled evenly over the cheese.
  8. Return the baking pan to the oven (middle rack) and cook for another 6-7 minutes, until everything is heated through and the cheese is melted.
  9. Slice the breakfast pizza into 12 slices and serve warm.

Notes

This breakfast pizza is a versatile recipe. Feel free to add your favorite vegetables like bell peppers, onions, or spinach to the egg mixture or as a topping. For a healthier option, consider using a whole wheat pizza crust.
