Ingredients

  • 1/2 onion diced
  • 1 lb. lean ground beef
  • 2 tsp garlic powder
  • 3 tbsp all-purpose flour
  • 1 tbsp paprika
  • 1/4 cup dry sherry or beef broth
  • 3 cups low sodium beef broth
  • 1 cup milk
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups dry rotini noodles
  • 2 cups shredded sharp cheddar cheese

Equipment

  • Large skillet

Method

  1. Cook the diced onion in a large skillet over medium heat until soft. Add the ground beef and cook, breaking it apart, until it is browned. Drain any excess fat.
  2. Stir in the garlic powder and paprika. Cook for one minute until fragrant.
  3. Sprinkle the flour over the meat mixture and stir for one minute. Pour in the dry sherry (or beef broth) and scrape up any browned bits from the bottom of the skillet.
  4. Add the beef broth, milk, salt, and pepper. Bring the mixture to a simmer.
  5. Stir in the dry rotini noodles. Cover the skillet and reduce the heat to low. Cook for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  6. Remove the skillet from the heat. Stir in the shredded cheddar cheese until it melts and the sauce becomes creamy. Serve immediately.

Notes

This recipe is a fun way to serve familiar flavors in a new format. Feel free to add other toppings you like on a burger, such as a dash of Worcestershire sauce with the broth, or a sprinkle of dried onion flakes for extra flavor.
