Cheesy Muffin Tin Cottage Cheese Egg Bites

These easy egg bites are perfect for busy mornings. They are packed with protein and can be customized with your favorite mix-ins.

Ingredients
  

For the Egg Bites
  • 8 large eggs
  • 1 cup cottage cheese any kind
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Mix-in Ideas (Choose any or combine)
  • 1/4 cup spinach chopped
  • 1/4 cup green onion finely sliced
  • 1/4 cup bell pepper chopped
  • 1/4 cup bacon crumbled
  • 1/4 cup ham chopped

Equipment

  • 12-cup muffin tin
  • Silicone liners (optional)

Method
 

  1. Preheat your oven to 180C/350F. Lightly grease a 12-cup muffin tin or line it with silicone liners.
  2. In a blender, combine the eggs, cottage cheese, salt, and pepper. Blend until smooth.
  3. Distribute your chosen mix-ins evenly among the muffin cups. Pour the blended egg mixture over the mix-ins in each cup, filling about 3/4 full.
  4. Place the muffin tin in the oven and bake for 17-19 minutes, or until the egg bites are set and lightly golden on top.
  5. Allow the egg bites to cool for a few minutes before removing them from the tin. Serve warm or store for later.
