Cranberry Brie Bites

Ingredients
  

  • 8 ounce cold brie cheese round
  • 1/3 cup whole berry cranberry sauce such as Spiced Cranberry Sauce
  • 2 tablespoons packed light or dark brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated orange zest from 1/2 medium orange
  • 1/8 teaspoon ground nutmeg
  • 2 tablespoons coarsely chopped nuts such as pistachios, almonds, walnuts, or pecans
  • 2 sprigs fresh rosemary divided (optional)
For Serving
  • Assorted store-bought or homemade crackers, or crostini

Method
 

  1. Preheat your oven to 350°F (175°C). In a small bowl, combine the cranberry sauce, brown sugar, vanilla extract, orange zest, and nutmeg. Stir until well mixed.
  2. Place the cold brie cheese round in a small baking dish or pie plate if you plan to serve it directly from the dish. If you want to transfer the cheese to a serving platter later, line your baking dish with parchment paper first.
  3. Spoon the prepared cranberry mixture evenly over the top of the brie. Sprinkle the chopped nuts over the cranberry mixture. If using, place one sprig of fresh rosemary on top.
  4. Bake for 8 to 15 minutes, or until the cheese is soft when gently poked. Avoid overbaking; the cheese should be soft but not completely melted or collapsed.
  5. If you baked the brie in a dish lined with parchment paper, carefully lift the paper to slide the cheese onto your serving dish. Discard the used rosemary sprig and garnish with a fresh sprig of rosemary, if desired. Serve immediately with your choice of crackers or crostini.

Notes

This recipe is a simplified version of traditional baked brie, perfect for individual servings or as a centerpiece appetizer. The key is to bake just until the brie is warm and soft, allowing it to hold its shape while being wonderfully gooey when spread.
