Crispy Oven Baked Chicken Drumsticks

Ingredients
  

  • 3 packs Pasture-raised chicken drumsticks (about 13-15 total)
  • 3 tablespoons Extra virgin olive oil Use 4 if needed
  • 2 teaspoons Sea salt
  • 2 teaspoons Garlic powder
  • 2 teaspoons Chili powder
  • 2 teaspoons Oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Ground pepper

Equipment

  • Large bowl
  • Baking sheet
  • Wire rack
  • Paper towel

Method
 

  1. Preheat your oven to 420 degrees Fahrenheit.
  2. Pat all of the drumsticks dry with a paper towel to remove excess moisture, then add them to a large bowl.
  3. Once all drumsticks are in the bowl, make sure the skin is covering the drumstick and is not folded. Toss with olive oil, then add your seasonings and mix until everything is fully coated.
  4. Prepare a baking sheet and rack by spraying both with oil. Stack the rack on top of the baking sheet to allow enough air to circulate around the drumsticks while cooking. Add each drumstick to the pan, then bake for 35 minutes. Remove the pan, flip the drumsticks, and return them to the oven for the remaining 15 minutes.
  5. The drumsticks are done when they are golden and crispy. Enjoy your meal.
  6. Store any leftover, cooked drumsticks in an airtight container in the refrigerator for up to 3 to 4 days.

Notes

This recipe yields crispy skin because you dry the chicken first and cook it on a rack, which allows air to circulate underneath. This method works well for busy home cooks making family-friendly meals.
