Cucumber Agua Fresca

Ingredients
  

For the Agua Fresca
  • 2 cups cucumber peeled and roughly chopped
  • 2 cups watermelon cubed, seeds removed
  • 1/2 cup lime juice freshly squeezed
  • 4 cups water
  • 2-4 tablespoons sugar or to taste
Optional Garnishes
  • 1 lime sliced
  • 1 cucumber thinly sliced

Equipment

  • Fine mesh sieve
  • Pitcher

Method
 

  1. Combine the chopped cucumber, cubed watermelon, lime juice, and 4 cups of water in a blender.
  2. Blend until smooth. If the mixture is too thick, you can add a little more water.
  3. Strain the mixture through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible. Discard the solids.
  4. Stir in the sugar, starting with 2 tablespoons and adding more to reach your desired sweetness.
  5. Chill the agua fresca in the refrigerator for at least 30 minutes before serving. Serve over ice, garnished with lime slices and cucumber slices if desired.

Notes

For a smoother texture, you can strain the mixture twice. Adjust the sweetness and tartness to your preference by adding more sugar or lime juice.
