- In a mixing bowl, whisk together the flour and salt.
- Add the eggs and milk to the dry ingredients. Whisk until the batter is just combined. Do not overmix; a few small lumps are fine.
- Heat a lightly oiled griddle or large skillet over medium heat.
- Pour or scoop the batter onto the hot surface, using about 1/4 cup for each pancake.
- Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
- Serve immediately with your favorite toppings.
Notes
This recipe is very simple. If you want slightly fluffier pancakes, you can add 1 teaspoon of baking powder, but this will make it a four-ingredient recipe. For a richer flavor, use whole milk.
