Easy 3 Ingredient Pancakes for Lazy Mornings

This recipe came from a slow Sunday morning when I wanted pancakes but did not want a complicated process. With just flour, eggs, and milk, you can make a fluffy stack of pancakes quickly. This simple recipe is perfect for busy individuals or families needing a fast, satisfying breakfast.
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings: 4 people
Course: Breakfast
Cuisine: American

Ingredients

Pancake Batter
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/4 tsp salt

Equipment

  • Mixing bowl
  • Whisk
  • Griddle or large skillet
  • Spatula

Method

  1. In a mixing bowl, whisk together the flour and salt.
  2. Add the eggs and milk to the dry ingredients. Whisk until the batter is just combined. Do not overmix; a few small lumps are fine.
  3. Heat a lightly oiled griddle or large skillet over medium heat.
  4. Pour or scoop the batter onto the hot surface, using about 1/4 cup for each pancake.
  5. Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
  6. Serve immediately with your favorite toppings.

Notes

This recipe is very simple. If you want slightly fluffier pancakes, you can add 1 teaspoon of baking powder, but this will make it a four-ingredient recipe. For a richer flavor, use whole milk.
