Easy Beef Taco Casserole

This casserole is a simple, hearty meal perfect for busy weeknights when you need something quick and satisfying for your family. It uses pantry staples to create a comforting, kid-friendly dish baked right in the oven.

Ingredients
  

Casserole Base
  • 1 pound extra lean ground beef 90% lean
  • 10.75 ounces Condensed Tomato Soup Campbell’s
  • 1 cup Picante Sauce Pace
  • 1/2 cup water
  • 2 teaspoons chili powder
  • 8 corn tortillas tortillas 6-inch, cut into 1-inch pieces (or 6 flour tortillas)
Topping
  • 1 cup shredded Cheddar cheese or Monterey Jack cheese About 4 ounces, divided

  • 9-inch square baking dish

Method
 

  1. Preheat your oven to 375 degrees F. Lightly grease a 9-inch square baking dish.
  2. Cook the ground beef in a skillet over medium heat until browned. Drain off any excess fat.
  3. Stir the tomato soup, picante sauce, water, and chili powder into the cooked beef. Heat the mixture through.
  4. Spread half of the cut tortillas evenly over the bottom of the prepared baking dish.
  5. Spoon half of the beef mixture over the layer of tortillas. Sprinkle with half of the cheese.
  6. Repeat the layers: place the remaining tortillas on top of the cheese, cover with the rest of the beef mixture, and top with the remaining cheese.
  7. Bake for 25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden. Let it stand for a few minutes before you serve it.

Notes

You can adjust the amount of picante sauce based on your family's preference for spice. If you use flour tortillas, cut them into slightly larger pieces than the corn tortillas.
