Ingredients

For the Potatoes
  • 2 pounds red potatoes, halved
  • 1 tablespoon vegetable oil, or as needed
  • 1 teaspoon cooking spray or as needed
For the Parmesan Coating
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
For Serving (Optional)
  • 1/4 cup sour cream Optional

Equipment

  • 9x13-inch baking pan or cast iron skillet
  • Bowl

Method

  1. Preheat your oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray. Pour about 1 teaspoon vegetable oil into the pan to coat the bottom.
  2. Mix the Parmesan cheese, salt, garlic powder, paprika, and pepper together in a bowl.
  3. Blot the cut sides of the potatoes dry with a paper towel to remove moisture.
  4. Place the potatoes in a separate bowl. Drizzle with 1 tablespoon vegetable oil and toss until the potatoes are lightly coated. Sprinkle the potatoes with the Parmesan mixture and toss again to coat them evenly.
  5. Arrange the potatoes cut-side down on the prepared baking pan.
  6. Bake in the preheated oven for 15 to 20 minutes. Flip the potatoes and continue baking until they are golden and crispy, about 15 to 20 more minutes.
  7. Serve the potatoes hot, with sour cream if you are using it.

Notes

Try to get as much of the Parmesan mixture onto the cut side of the potatoes as possible. When you place the potatoes in the baking pan, press the cut sides directly into any Parmesan mixture that sticks to the sides and bottom of the bowl to distribute it evenly.
