- Preheat your oven to 400 degrees F (200 degrees C). In a small bowl, combine the softened butter, minced garlic, and dried Italian herbs. Mix well and set aside.
- Season your steaks generously with salt, pepper, and garlic powder on both sides.
- Place an oven-safe skillet over medium-high heat. Add the olive oil. Sear the steaks for 2-3 minutes on each side until nicely browned. Remove the steaks from the skillet and set them on a plate.
- Add the diced baby potatoes to the same skillet. Season them with salt, pepper, and garlic powder. Sauté for 3-5 minutes until they begin to brown. Push the potatoes to one side of the skillet and return the seared steaks to the other side.
- Transfer the skillet to the preheated oven. Cook for 15-20 minutes, or until the potatoes are fork-tender and the steak is cooked to your desired doneness.
- Immediately after removing the skillet from the oven, place a dollop of the prepared garlic butter mixture on top of each steak. Distribute the remaining garlic butter over the potatoes. Allow the butter to melt for a minute, then stir the potatoes to coat them in the butter. Sprinkle with fresh thyme and parsley before serving.

You can use various cuts of beef for this recipe; choose steaks that fit comfortably in a 12-inch skillet alongside the potatoes, typically about 4-6 inches long and 1 inch thick. Avoid very thin cuts, as they can overcook quickly. A cast-iron skillet is highly recommended for achieving a good sear on the steak.
