Grilled Chicken Cobb Bowls

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts Chicken breasts
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Salad
  • 8 cups Romaine lettuce chopped
  • 2 Hard-boiled eggs chopped
  • 4 strips Bacon cooked and crumbled
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Avocado diced
  • 1/4 cup Blue cheese crumbled
For the Dressing
  • 1/2 cup Ranch dressing

Equipment

  • Grill
  • Large bowl

Method
 

  1. Preheat your grill to medium-high heat.
  2. Rub chicken breasts with olive oil, salt, and pepper.
  3. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes before slicing.
  4. In a large bowl, combine chopped romaine lettuce, chopped hard-boiled eggs, crumbled bacon, halved cherry tomatoes, diced avocado, and crumbled blue cheese.
  5. Slice the grilled chicken and add it to the salad.
  6. Drizzle with ranch dressing and toss to combine.
  7. Serve immediately.

Notes

You can substitute your favorite dressing for ranch. Other additions like corn or red onion are also delicious.
