Grilled Peach Salad with Honey Dressing

Ingredients
  

For the Salad
  • 4 ripe peaches halved and pitted
  • 5 oz arugula
  • 4 oz goat cheese crumbled
  • 1/4 cup pecans toasted, optional
For the Honey-Lime Dressing
  • 3 tbsp olive oil
  • 2 tbsp lime juice fresh
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper freshly ground

Method
 

  1. Preheat your grill to medium-high heat.
  2. Lightly brush the cut sides of the peaches with a little olive oil. Grill for 3-5 minutes per side, until grill marks appear and peaches are slightly softened.
  3. Remove peaches from the grill and let them cool slightly. Once cool enough to handle, slice each half into wedges.
  4. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined.
  5. In a large bowl, combine the arugula, grilled peach wedges, crumbled goat cheese, and toasted pecans (if using).
  6. Drizzle the honey-lime dressing over the salad and toss gently to coat.
  7. Serve immediately.

Notes

You can substitute feta cheese for goat cheese if desired. For a different flavor profile, try adding a sprinkle of fresh mint or basil to the salad.
