Ingredients
  

For the Mushrooms
  • 4 large portobello mushrooms stems removed, gills scraped
For the Marinade
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper. This is your marinade.
  3. Clean the portobello mushrooms by wiping them with a damp cloth. Remove the stems and scrape out the dark gills with a spoon. This step is optional but can improve texture.
  4. Place the mushrooms gill-side up on a clean surface. Brush both sides of the mushrooms generously with the prepared marinade.
  5. Place the marinated mushrooms on the preheated grill, gill-side up first. Grill for about 7-10 minutes.
  6. Flip the mushrooms and grill for another 5-7 minutes, or until tender and slightly charred. Cooking time will vary depending on the size of the mushrooms and the heat of your grill.
  7. Remove the mushrooms from the grill. Serve hot as a main course or a side dish.

Notes

You can add other seasonings to the marinade, such as a pinch of red pepper flakes for a little heat, or fresh herbs like thyme or rosemary. These mushrooms are also great stuffed with cheese or other vegetables before grilling.
