Grilled Watermelon Skewers with Halloumi Cheese

Ingredients
  

For the Skewers
  • 1/2 medium Watermelon cut into 1-inch cubes
  • 8 oz Halloumi cheese cut into 1-inch cubes
  • 2 tbsp Olive oil
  • 1 tsp Fresh mint leaves chopped
  • 1/4 tsp Black pepper freshly ground
Optional Garnish
  • 1 tbsp Balsamic glaze

Method
 

  1. Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
  2. Brush the skewers with olive oil and sprinkle with chopped mint and black pepper.
  3. Preheat your grill to medium-high heat.
  4. Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and slightly softened.
  5. Remove from grill and let cool slightly. Chill for at least 15 minutes before serving.
  6. Drizzle with balsamic glaze, if desired, before serving.

Notes

You can prepare the skewers a few hours in advance and keep them refrigerated. Ensure your halloumi is cut into uniform cubes for even grilling.
