- Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing it.
- In a small bowl, mix together the flour, baking soda, salt, and cinnamon. Set this dry mixture aside.
- In a large bowl, whisk together the mashed bananas and eggs until they are combined.
- Mix in the coconut oil, maple syrup, and vanilla extract until the wet ingredients are fully incorporated.
- Add the dry ingredients to the wet ingredients and stir until they are just combined. Do not overmix the batter.
- Fold in the chocolate chips or any other desired mix-ins, such as nuts.
- Pour the batter into the prepared bread loaf pan.
- Bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool before slicing and serving.
