Ingredients
  

For the Pork
  • 1.5 pound pork tenderloin sliced into bite-size pieces
  • 1/2 cup cornstarch
  • 2 large eggs beaten
For the Sauce
  • 3 large garlic cloves finely minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
For the Broccoli and Serving
  • 2 cups broccoli florets
  • 1/2 teaspoon salt plus extra for broccoli
  • 1/2 teaspoon black pepper freshly ground, plus extra for broccoli
  • 1 cup neutral oil for frying, plus extra for broccoli
  • hot cooked rice for serving

Method
 

  1. Preheat your oven to 375°F (190°C). Prepare a large baking sheet.
  2. Slice the pork tenderloin into bite-size pieces.
  3. In a small bowl, whisk together the minced garlic, honey, soy sauce, and ketchup until well combined. Set aside.
  4. Place the pork pieces in a bowl. Add the salt, pepper, and cornstarch. Toss to coat the pork evenly.
  5. In a shallow dish, beat the eggs.
  6. Heat 1 cup of neutral oil in a large frying pan over medium-high heat.
  7. Dip the cornstarch-coated pork pieces into the beaten eggs, letting any excess drip off. Carefully place the pork into the hot oil. Fry in batches if necessary, ensuring not to overcrowd the pan or stack the pork.
  8. Fry the pork for a few minutes on each side until lightly browned. The cornstarch coating will be light brown.
  9. Transfer the fried pork to one side of the prepared baking sheet. Pour the honey garlic sauce over the pork and toss to coat. Leave space on the other side of the baking sheet for the broccoli.
  10. Place the broccoli florets on the empty side of the baking sheet. Drizzle with a little extra oil, salt, and pepper, and toss to coat.
  11. Place the baking sheet in the preheated oven. Bake for 7 minutes. Toss the pork and broccoli separately, then bake for another 7 minutes.
  12. Serve the honey garlic pork and broccoli over hot cooked rice.
