For the Meatloaf
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs plain or Italian-seasoned
  • 1/4 cup grated Parmesan cheese
  • 1 egg lightly beaten
  • 2 cloves garlic minced
  • 1/4 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Glaze
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, beaten egg, minced garlic, milk, Worcestershire sauce, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. Shape the mixture into a loaf and place it in the prepared baking dish.
  4. In a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard for the glaze.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is bubbly.
  7. Let the meatloaf rest for 10 minutes before slicing and serving. This helps the juices redistribute, making it more tender.
