- Cook the orzo pasta according to package directions. Drain and rinse with cold water.
- In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour the dressing over the orzo and vegetable mixture. Toss gently to combine.
- Serve immediately or chill for later.
Notes
You can add other vegetables like corn, peas, or zucchini. Feta cheese or grilled chicken can also be added for extra flavor and protein.
