Ingredients
  

For the Miso Glaze
  • 2 tablespoons red miso paste
  • 1 tablespoon maple syrup
  • 2 teaspoons tamari or dark soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon hot chili sauce, such as Sriracha
For the Salmon
  • 4 skinless salmon fillets (about 6 ounces each and about 1 1/4 inches thick)

Method
 

  1. Preheat your broiler to high. Line a baking sheet with foil for easier cleanup.
  2. In a small bowl, whisk together the red miso paste, maple syrup, tamari or soy sauce, rice vinegar, and hot chili sauce until the glaze is smooth.
  3. Place the salmon fillets on the prepared baking sheet.
  4. Brush the miso glaze evenly over the top surface of each salmon fillet.
  5. Place the baking sheet under the broiler. Broil for 6 to 10 minutes, watching carefully to prevent burning. The glaze should bubble and caramelize, and the salmon should flake easily with a fork when done.
  6. Remove the salmon from the oven. Serve immediately.

Notes

This dish pairs well with steamed green beans or a simple side of steamed rice if you are not strictly limiting carbohydrates. The glaze creates a rich umami flavor that complements the richness of the salmon.
