Mongolian Ground Beef Noodles

Ingredients
  

For the Sauce
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon red pepper flakes optional
For the Noodles and Beef
  • 1 pound ground beef 80/20 recommended
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 8 ounces egg noodles cooked according to package directions

  • Medium bowl

Method
 

  1. In a medium bowl, whisk together soy sauce, beef broth, brown sugar, oyster sauce, sesame oil, cornstarch, and red pepper flakes (if using). Set aside.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add the minced garlic and grated ginger to the skillet with the beef. Cook for 1 minute until fragrant.
  4. Pour the prepared sauce into the skillet. Stir well to combine with the beef, garlic, and ginger. Bring the sauce to a simmer and cook for 2-3 minutes, or until it thickens.
  5. Add the cooked egg noodles to the skillet. Toss everything together until the noodles are well coated with the sauce and beef.
  6. Serve immediately, garnished with sliced scallions.

Notes

For a spicier dish, increase the amount of red pepper flakes. You can also add some sliced bell peppers or broccoli florets along with the beef for extra vegetables.
