- Preheat your oven to 350˚F. Line a 9 by 5-inch loaf pan with parchment paper, allowing the paper to overhang on the two longer sides.
- Mash the bananas in a large bowl. Add the sugar and melted butter, and continue to mash with the bananas until the mixture is almost completely smooth.
- Add the eggs and vanilla extract to the bowl and whisk until the mixture is smooth.
- Add the flour, baking soda, cinnamon, and salt. Fold the ingredients with a rubber spatula until no streaks of flour remain in the batter.
- Scrape the batter into the prepared pan and bake for 50 to 55 minutes, or until a cake tester inserted in the center of the loaf comes out clean.
- Let the loaf cool for at least 20 minutes in the pan. Remove the loaf from the pan and cool completely on a wire rack before slicing and serving.
