Peach Brown Sugar Cobbler

Ingredients
  

For the Filling
  • 6 cups peeled, sliced peaches fresh or frozen
  • 1/2 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cinnamon
For the Topping
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter cut into small pieces
  • 1/3 cup milk

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup brown sugar, 2 tablespoons flour, lemon juice, and cinnamon. Toss gently to coat the peaches.
  3. Pour the peach mixture into the 9x13 inch baking dish and spread evenly.
  4. In a separate medium bowl, whisk together 1 cup flour, 1/2 cup brown sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Stir in the milk until just combined. Do not overmix.
  7. Drop spoonfuls of the topping mixture over the peaches, covering most of the surface.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the cobbler cool for at least 10 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for an extra treat.
