Ingredients

For the Salad
  • 2 balls burrata cheese room temperature
  • 3 ripe peaches pitted and sliced
  • 1/2 cup fresh basil leaves torn
  • 1/4 cup toasted pine nuts
For the Balsamic Glaze
  • 1/2 cup balsamic vinegar
  • 1 tbsp honey

Equipment

  • Large platter
  • small bowl
  • Whisk

Method

  1. Prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat. Cook, stirring occasionally, until the mixture thickens enough to coat the back of a spoon, about 5-8 minutes. Remove from heat and let cool.
  2. Arrange the burrata cheese balls on a large platter. Distribute the sliced peaches around the burrata.
  3. Scatter the torn basil leaves and toasted pine nuts over the platter.
  4. Drizzle the cooled balsamic glaze over the entire platter just before serving.
  5. Chill for 10 minutes before serving to allow flavors to meld.

Notes

Serve immediately for the best texture and flavor. You can substitute other fresh fruits like strawberries or figs when peaches are not in season.
