Peach Crumble Bars

These peach crumble bars feature a buttery oat topping and a sweet peach filling.

Method
 

  1. Preheat your oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, combine the flour, rolled oats, 0.75 cup sugar, baking soda, and salt for the crust and topping. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press about two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, gently toss the sliced peaches with 0.5 cup sugar, cornstarch, lemon juice, and cinnamon until evenly coated.
  5. Spread the peach filling evenly over the crust in the baking pan.
  6. Sprinkle the remaining crumb mixture evenly over the peach filling.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Let the bars cool completely in the pan before cutting into 12 bars.

Notes

You can use frozen peaches if fresh are not available, but do not thaw them before using. Adjust baking time as needed.
