- Preheat your oven to 350ºF (175ºC). In a small bowl, combine the brown sugar, cayenne pepper, garlic powder, paprika, salt, and black pepper.
- Remove the pork chops from their package. Rub the seasoning mixture over all sides of each chop. The moisture from the meat will help the seasoning stick.
- Heat olive oil in a large, oven-safe skillet over medium heat. When the oil shimmers, add the pork chops. Cook for about 5 minutes on each side until browned.
- If your pork chops are thicker than one inch, transfer the skillet to the preheated oven. Cook for an additional 5-10 minutes, or until a meat thermometer registers an internal temperature of 145ºF (63ºC). Cook longer if needed.
- Just before serving, dredge the chops through the thick sauce in the bottom of the pan.

This recipe is best with boneless pork chops that are about 3/4-inch thick. This thickness ensures they cook through quickly without the glaze burning.
