Red White and Blue Icebox Cake

Ingredients
  

For the Cake
  • 2 packages graham crackers about 14-16 crackers per package
For the Cream
  • 3 cups heavy whipping cream cold
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
For the Topping
  • 2 cups fresh strawberries sliced
  • 2 cups fresh blueberries

Equipment

  • 9x13-inch baking dish
  • Electric mixer
  • Spatula

Method
 

  1. Line the bottom of a 9x13 inch baking dish with a single layer of graham crackers. You may need to break some crackers to fit.
  2. In a large bowl, beat the cold heavy whipping cream with an electric mixer on medium-high speed until soft peaks form.
  3. Gradually add the powdered sugar and vanilla extract to the whipped cream. Continue beating until stiff peaks form.
  4. Spread half of the whipped cream mixture evenly over the graham crackers.
  5. Arrange half of the sliced strawberries and half of the blueberries over the whipped cream.
  6. Add another layer of graham crackers over the fruit.
  7. Spread the remaining whipped cream mixture over the second layer of graham crackers.
  8. Top with the remaining sliced strawberries and blueberries.
  9. Cover the dish with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, to allow the crackers to soften and the flavors to meld.
  10. Slice and serve chilled.

Notes

For an extra festive look, you can arrange the fruit in stripes or a star pattern. You can also substitute other berries like raspberries.
