Ingredients
  

  • 2 tablespoons olive oil
  • 6 large bone-in chicken thighs or 8-10 small
  • 3-5 sprigs fresh thyme
  • 3-5 sprigs fresh rosemary
  • 1 lemon sliced into rounds
  • 1/2 teaspoon garlic powder
  • salt
  • ground black pepper

Method
 

  1. Preheat your oven to 450 degrees F. Place a 12- to 14-inch cast iron skillet on the stove top over medium-high heat. Add the olive oil.
  2. Pat the skin on the chicken thighs completely dry with paper towels. Sprinkle the thighs with garlic powder. Then season generously with salt and ground black pepper.
  3. Once the oil is smoking hot, carefully place the chicken thighs in the skillet, skin side down. Sear for 5-7 minutes until the skin is golden-brown and crispy.
  4. Flip the chicken thighs over. Add the fresh herb sprigs and the lemon slices to the skillet around the chicken.
  5. Transfer the entire skillet to the preheated oven. Roast for 15-18 minutes, or until the chicken is cooked through. Serve warm.
