Ingredients

For the Seasoning
  • 1.5 tablespoon smoked paprika
  • 0.5 tablespoon garlic powder
  • 1.25 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon thyme
  • 0.5 teaspoon parsley
For the Chicken and Vegetables
  • 0.25 cup olive oil
  • 6 chicken thighs Springer Mountain Farms
  • 1 lb small red potatoes cut in half
  • 12 oz green beans

Equipment

  • Oven
  • small bowl
  • Large bowl
  • Baking sheet
  • Wire rack

Method

  1. Preheat your oven to 400 degrees F (200 degrees C). Wash the chicken thighs and pat them dry.
  2. In a small bowl, combine the smoked paprika, garlic powder, salt, black pepper, thyme, and parsley.
  3. In a large bowl, add the chicken, potatoes, green beans, olive oil, and the prepared seasoning mix. Use clean hands to mix everything until it is evenly coated.
  4. Spread the vegetables in a single, even layer on a baking sheet.
  5. Place a wire rack over the vegetables and arrange the chicken thighs on the rack. Ensure there is 1 inch of space between each thigh to prevent them from steaming.
  6. Bake for 45 to 48 minutes, or until the internal temperature of the chicken reaches 165 degrees F (74 degrees C).
  7. Remove the chicken from the rack and place it on the baking sheet with the vegetables. Brush some of the pan juices over the chicken and vegetables. Serve and enjoy!

Notes

Rinse and dry the chicken before adding oil and seasonings to help them stick better. To prevent splashing and bacterial spread, rinse your chicken in a bowl of water instead of under running water. Always wash your hands or wear food-grade gloves before mixing raw chicken with other ingredients. Store any leftovers in an airtight container for up to 3 days. To reheat, microwave covered in 1-minute intervals until hot.
