Skillet Peach Cake

This skillet peach cake is a simple dessert featuring fresh summer peaches baked into a tender cake.

Ingredients
  

For the Peaches
  • 3 large peaches peeled, pitted, and sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
For the Cake
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 375°F (190°C). Butter your 10-inch cast iron skillet.
  2. In a medium bowl, toss the sliced peaches with 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon. Set aside.
  3. In a large bowl, whisk together the flour, 1 cup of granulated sugar, baking powder, and salt.
  4. Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  5. In a separate small bowl, whisk together the eggs, milk, and vanilla extract.
  6. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  7. Spread half of the cake batter evenly into the prepared skillet.
  8. Arrange the cinnamon-sugar coated peach slices over the batter.
  9. Spoon the remaining cake batter over the peaches, spreading it to cover them as much as possible.
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the cake cool in the skillet for at least 10 minutes before slicing and serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
