Smoky Chicken Skewers with Garlic Yogurt

Ingredients
  

For the Chicken Skewers
  • 1.5 lb boneless, skinless chicken thighs cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp cayenne pepper optional
  • 1 tsp salt
  • 0.5 tsp black pepper
For the Garlic Yogurt Sauce
  • 1 cup plain Greek yogurt
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

  1. In a large bowl, combine the chicken pieces with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Toss to coat the chicken evenly.
  2. Thread the marinated chicken onto skewers. If using wooden skewers, soak them in water for at least 30 minutes before use to prevent burning.
  3. Preheat your grill to medium-high heat.
  4. Grill the chicken skewers for 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks.
  5. While the chicken is grilling, prepare the garlic yogurt sauce. In a small bowl, mix together the Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper until well combined.
  6. Serve the smoky chicken skewers hot, with the garlic yogurt sauce on the side for dipping.

Notes

You can substitute chicken breasts for thighs, but be careful not to overcook them. Serve with a side of rice, salad, or grilled vegetables for a complete meal.
