Ingredients
  

For the Pinwheels
  • 8 ounces cream cheese softened
  • 1 cup frozen chopped spinach thawed and drained
  • 1/2 cup artichoke hearts diced
  • 1/4 cup sour cream or plain Greek yogurt
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 large flour tortillas

Method
 

  1. Mix the cream cheese, spinach, artichoke hearts, sour cream, Parmesan cheese, red pepper flakes, garlic powder, and salt in a small bowl until well combined.
  2. Spread the mixture evenly over the flour tortillas. You can make the dip layer as thick or thin as you prefer.
  3. Roll up each tortilla tightly.
  4. Place the rolled tortillas in the freezer for about 10 minutes. This firms up the dip, making the pinwheels easier to cut.
  5. Cut the tortilla logs into 1/2 inch thick slices.
  6. Serve immediately.

Notes

If you prefer a thinner filling, you will need more tortillas to get more pieces. To make ahead, roll up the tortillas and refrigerate the logs. If the cream cheese mixture is very soft, place them in the freezer and proceed from step 4 when ready to serve.
