Ingredients
  

For the Salad
  • 5 oz fresh spinach washed and dried
  • 1 cup fresh strawberries hulled and sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup pecans chopped and toasted
For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. In a large salad bowl, combine the spinach, sliced strawberries, red onion, and toasted pecans.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Serve immediately.

Notes

You can substitute walnuts for pecans if preferred. Add grilled chicken or shrimp for a more substantial meal.
