Ingredients
  

  • 3 cups cucumber, chopped peeled and seeded if desired
  • 2 cups cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1/2 cup red onion, thinly sliced optional
  • 1/4 cup fresh mint, chopped optional
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt to taste salt
  • Black pepper to taste black pepper

Method
 

  1. In a large bowl, combine the chopped cucumber, halved cherry tomatoes, crumbled feta cheese, sliced red onion (if using), and chopped mint (if using).
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, and dried oregano. Season with salt and black pepper to taste.
  3. Pour the dressing over the salad ingredients. Toss gently to combine.
  4. Serve immediately or chill for later.

Notes

This salad is best served fresh. You can add other vegetables like bell peppers or Kalamata olives for variation.
