Method
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, and red onion.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
- Pour the dressing over the pasta mixture. Add the chopped parsley, basil, and dill.
- Toss everything together until well combined. Chill in the refrigerator for at least 15 minutes before serving.
Notes
You can add other vegetables like bell peppers or corn. Grilled chicken or shrimp can be added for a complete meal.
