Ingredients
  

For the Salad
  • 4 ears Corn husked
  • 1 head Romaine lettuce chopped
  • 1 can Black beans rinsed and drained
  • 1 pint Cherry tomatoes halved
  • 1/2 cup Red onion thinly sliced
For the Dressing
  • 1 Avocado ripe
  • 1/4 cup Lime juice fresh
  • 2 tablespoons Olive oil
  • 1/4 cup Cilantro fresh, chopped
  • 1 clove Garlic minced
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 8-10 minutes, turning occasionally, until lightly charred. Let cool, then cut the kernels off the cobs.
  3. While the corn cools, prepare the dressing. Combine avocado, lime juice, olive oil, cilantro, garlic, salt, and pepper in a blender. Blend until smooth and creamy.
  4. In a large bowl, combine the chopped romaine lettuce, black beans, cherry tomatoes, red onion, and grilled corn kernels.
  5. Pour the avocado lime dressing over the salad and toss gently to combine.
  6. Serve immediately.

Notes

You can add grilled chicken or shrimp for extra protein. Adjust seasoning to your preference.
