For the Veggie Tray
  • 1 English cucumber sliced
  • 1 red bell pepper cut into strips
  • 1 yellow bell pepper cut into strips
  • 1 green bell pepper cut into strips
  • 1 bag baby carrots
  • 1 crown broccoli cut into florets
  • 2 candy eyes for turkey shape
Goat Cheese Dip (Optional)
  • 6 ounces soft goat cheese room temperature
  • 1/3 cup mixed fresh herbs parsley, basil, chives, finely chopped
  • 2 Tablespoons shallot minced
  • 1/4 teaspoon black pepper or to taste
  • 1/2 cup heavy whipping cream cold (use 1/3 cup for stiffer consistency)
  • 1 pinch sea salt fine, optional

Method
 

  1. Prepare the vegetables: Wash and chop the cucumber, bell peppers, and broccoli into bite-sized pieces. Ensure the baby carrots are clean.
  2. If making the goat cheese dip: In a small bowl, combine the softened goat cheese, chopped herbs, minced shallot, and black pepper. Mix well.
  3. Gradually add the heavy whipping cream to the goat cheese mixture, beating until smooth and creamy. Add more or less cream to reach your desired consistency. Stir in the pinch of sea salt if using.
  4. Arrange the vegetables on a large platter. You can create a turkey shape by arranging the carrots and bell pepper strips to form a body and feathers, using the cucumber slices for the head and neck, and placing the candy eyes on the cucumber head.
  5. Place the goat cheese dip in the center of the platter or in a separate small bowl.
  6. Chill the veggie tray for at least 15 minutes before serving to allow the flavors to meld.

Notes

This veggie tray can be prepared ahead of time. Store the cut vegetables and the dip separately in airtight containers in the refrigerator. Assemble just before serving for maximum freshness.
