This recipe creates a fun and festive turkey-shaped veggie tray, perfect for Thanksgiving gatherings. It's a crowd-pleasing, healthy appetizer that appeals to both adults and children.

Ingredients
  

For the Turkey Veggie Tray
  • 1 Cucumber sliced
  • 1 Red Pepper bottom cut off for head, remaining cut into sticks
  • 1 Yellow Pepper sliced
  • 8 oz Peas bag
  • 12 oz Baby Carrots cut in half lengthwise if desired, one half sliced for legs
  • 2 Candy Eyes
For Serving
  • 1 Favorite Dip or Dressing in a bowl

Equipment

  • Large Round Serving Tray
  • Knife
  • Bowl

Method
 

  1. Slice the cucumber and yellow pepper into thin slices. Cut the baby carrots in half lengthwise if you wish.
  2. Place your dip or dressing into a bowl at the center bottom of the tray.
  3. Starting with the peas, line the veggies up to create turkey feathers in a half circle (or a little more than a half circle). Follow with the carrots, bell pepper sticks, and cucumber rounds.
  4. Cut the bottom off the red bell pepper and place it into the dip or dressing to create a turkey head. You can cut up the remaining red pepper into short sticks and add them to your turkey body for another layer of color.
  5. Place two candy eyes on top for the turkey face.
  6. Slice a baby carrot in half vertically and place the carrots on top of the dip to create legs.
  7. Your turkey veggie tray is ready to serve.

Notes

This veggie tray can be prepared up to 15 minutes ahead of time. Store covered in the refrigerator.
