Ingredients
  

For the Sandwich
  • 1 English muffin cut in half
  • 2 Eggs
  • 2-4 slices Ham black forest or any kind
  • 1/3 cup Finely shredded cheese Mexican cheese recommended
  • 1 tsp Chives finely chopped
  • to taste Salt
  • to taste Pepper
  • 1 Tbsp Olive oil or butter to saute

Equipment

  • Toaster
  • Skillet

Method
 

  1. Toast the English muffin halves.
  2. Heat olive oil or butter in a skillet over medium heat. Add the ham slices and cook until lightly browned.
  3. Crack the eggs into the skillet. Cook to your desired doneness. Season with salt and pepper.
  4. Place the cooked eggs and ham onto one half of the English muffin.
  5. Top with shredded cheese and chopped chives. Place the other half of the English muffin on top.
  6. If the cheese has not melted, you can place the sandwich back in the warm skillet for a minute or cover the skillet briefly.

Notes

To make 2 sandwiches at a time, toast the English muffins in a toaster and sauté two sets of eggs in the pan.
