Method
- Toast the English muffin halves.
- Heat olive oil or butter in a skillet over medium heat. Add the ham slices and cook until lightly browned.
- Crack the eggs into the skillet. Cook to your desired doneness. Season with salt and pepper.
- Place the cooked eggs and ham onto one half of the English muffin.
- Top with shredded cheese and chopped chives. Place the other half of the English muffin on top.
- If the cheese has not melted, you can place the sandwich back in the warm skillet for a minute or cover the skillet briefly.
Notes
To make 2 sandwiches at a time, toast the English muffins in a toaster and sauté two sets of eggs in the pan.
