Ingredients
  

For the Sandwich
  • 8 slices sourdough bread
  • 6 tablespoons butter softened, divided
  • 3 tablespoons mayonnaise
  • 3 tablespoons manchego cheese finely shredded
  • 1/8 teaspoon onion powder
  • 4 ounces brie cheese rind removed
  • 1/2 cup sharp white cheddar cheese shredded
  • 1/2 cup Monterey jack cheese shredded
  • 1/2 cup gruyere cheese shredded

Equipment

  • Griddle or large skillet
  • Spatula
  • Knife
  • Cutting board
  • small bowl

Method
 

  1. In a small bowl, combine the shredded manchego cheese, onion powder, brie cheese, sharp white cheddar, Monterey jack, and gruyere cheese. Mix well.
  2. Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
  3. Spread mayonnaise on the unbuttered side of two bread slices. This will be the inside of your sandwich.
  4. Divide the cheese mixture evenly between the two bread slices, on top of the mayonnaise.
  5. Top with the remaining two slices of bread, butter-side up.
  6. Heat a griddle or large skillet over medium heat. Place the sandwiches on the hot surface.
  7. Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  8. Remove from the griddle, let cool slightly, and serve immediately.

Notes

For an extra crispy crust, you can use a combination of butter and mayonnaise on the outside of the bread. Experiment with different cheese combinations to find your favorite melty blend!
