- In a small bowl, combine the shredded manchego cheese, onion powder, brie cheese, sharp white cheddar, Monterey jack, and gruyere cheese. Mix well.
- Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
- Spread mayonnaise on the unbuttered side of two bread slices. This will be the inside of your sandwich.
- Divide the cheese mixture evenly between the two bread slices, on top of the mayonnaise.
- Top with the remaining two slices of bread, butter-side up.
- Heat a griddle or large skillet over medium heat. Place the sandwiches on the hot surface.
- Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
- Remove from the griddle, let cool slightly, and serve immediately.
Notes
For an extra crispy crust, you can use a combination of butter and mayonnaise on the outside of the bread. Experiment with different cheese combinations to find your favorite melty blend!
