Ingredients
  

For the Filling
  • 1 Tbsp olive oil
  • 3/4 cup chopped yellow onion
  • 1 lb 95% lean ground turkey
  • 2 cloves garlic
  • to taste Salt and freshly ground black pepper
  • 1 Tbsp chili powder (preferably 2 tsp regular chili powder and 1 tsp ancho chili powder)
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 cup tomato sauce
  • 1/2 cup low-sodium chicken broth
For Serving
  • 1 head Iceberg or Romain lettuce leaves, doubled up for serving
  • as desired Shredded Mexican cheese for serving
  • as desired diced Roma tomatoes for serving
  • as desired diced red onion for serving
  • as desired diced avocado for serving
  • as desired chopped cilantro for serving
  • as desired light sour cream for serving

Method
 

  1. Heat olive oil in a non-stick skillet over medium-high heat.
  2. Add onion and saute for 2 minutes. Add turkey and garlic, season with salt and pepper, and cook, tossing and breaking up turkey occasionally, until cooked through, about 5 minutes.
  3. Add chili powder, cumin, paprika, tomato sauce, and chicken broth. Reduce heat to a simmer and cook about 5 minutes until the sauce has reduced.
  4. Serve the mixture over lettuce leaves with your desired toppings.

Notes

You can prepare the filling ahead of time and store it in the refrigerator or freezer. Do not include the fresh toppings until serving. If you want more heat, add hot sauce, extra chili powder, or red pepper flakes. If you cannot find Romaine lettuce, iceberg lettuce works well as a substitute.
