Ingredients
  

For the Sandwiches
  • 6 tablespoons butter softened, divided
  • 8 slices sourdough bread
  • 4 ounces Brie cheese rind removed and sliced
For the Cheese Mixture
  • 1/2 cup sharp white cheddar cheese shredded
  • 1/2 cup Monterey Jack cheese shredded
  • 1/2 cup Gruyere cheese shredded
For the Spread
  • 3 tablespoons mayonnaise
  • 3 tablespoons finely shredded Manchego or Parmesan cheese
  • 1/8 teaspoon onion powder

Method
 

  1. Spread 3 tablespoons of butter on one side of each bread slice. Place the bread, butter-side down, in a large skillet or electric griddle over medium-low heat. Toast for 2-3 minutes until golden brown. Remove the bread from the skillet.
  2. In a small bowl, combine the mayonnaise, Manchego cheese, and onion powder. In another bowl, mix together the shredded cheddar, Monterey Jack, and Gruyere cheeses.
  3. To assemble the sandwiches, place the sliced Brie cheese on the toasted side of 4 bread slices. Sprinkle the shredded cheese mixture evenly over the Brie.
  4. Top with the remaining 4 bread slices, ensuring the toasted side faces inward. Spread the mayonnaise mixture on the outside of each sandwich.
  5. Place the assembled sandwiches in the skillet. Cook for 5-6 minutes on each side, until the bread is golden brown and the cheese is fully melted. Serve immediately.
