- Spread 3 tablespoons of butter on one side of each bread slice. Place the bread, butter-side down, in a large skillet or electric griddle over medium-low heat. Toast for 2-3 minutes until golden brown. Remove the bread from the skillet.
- In a small bowl, combine the mayonnaise, Manchego cheese, and onion powder. In another bowl, mix together the shredded cheddar, Monterey Jack, and Gruyere cheeses.
- To assemble the sandwiches, place the sliced Brie cheese on the toasted side of 4 bread slices. Sprinkle the shredded cheese mixture evenly over the Brie.
- Top with the remaining 4 bread slices, ensuring the toasted side faces inward. Spread the mayonnaise mixture on the outside of each sandwich.
- Place the assembled sandwiches in the skillet. Cook for 5-6 minutes on each side, until the bread is golden brown and the cheese is fully melted. Serve immediately.
