For the Base
  • 1 large watermelon about 10-12 inches in diameter, rind removed, sliced into 1-inch thick rounds
For the Topping
  • 1 cup Greek yogurt plain or vanilla
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1/2 cup kiwi sliced
  • 1/2 cup mango diced
  • 1/4 cup mint leaves fresh, for garnish

Method
 

  1. Prepare the watermelon base: Place a large round slice of watermelon on a serving platter. Pat it dry with paper towels to remove excess moisture.
  2. Make the yogurt topping: In a small bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth.
  3. Assemble the pizza: Spread the yogurt mixture evenly over the watermelon slice, leaving a small border.
  4. Add the fruit: Arrange the mixed berries, kiwi slices, and diced mango over the yogurt topping. Get creative with your design!
  5. Garnish: Sprinkle fresh mint leaves over the fruit pizza.
  6. Chill: Cover the fruit pizza and refrigerate for at least 30 minutes to allow the flavors to meld and the pizza to firm up slightly.
  7. Serve: Slice the watermelon berry fruit pizza into wedges and serve immediately.

Notes

You can substitute any of your favorite fruits for the topping. Ensure the watermelon is well-drained before spreading the yogurt to prevent a watery base.
