- Make the chia pudding: In a bowl, whisk together chia seeds, almond milk, and maple syrup. Let it sit for 5 minutes, then whisk again to prevent clumping. Cover and refrigerate for at least 2 hours, or until thickened.
- Prepare the watermelon: In a blender, puree the cubed watermelon until smooth. You should have about 1.5 cups of puree.
- Assemble the parfaits: Spoon a layer of watermelon puree into the bottom of each serving glass. Top with a layer of chia pudding. Add another layer of watermelon puree, followed by a layer of chia pudding.
- Add the fruit topping: Top each parfait with mixed berries and chopped fresh fruit.
- Serve immediately or chill for later.
Notes
You can adjust the sweetness of the chia pudding to your preference. Feel free to use any combination of fruits for the topping.
