Watermelon Coconut Lime Popsicles

These refreshing watermelon, coconut, and lime popsicles are a perfect treat for kids on a hot day.

Ingredients
  

For the Popsicles
  • 4 cups seedless watermelon cubed
  • 1/2 cup unsweetened coconut milk
  • 2 tablespoons fresh lime juice
  • 1-2 tablespoons honey or maple syrup optional, to taste

Equipment

  • Popsicle molds

Method
 

  1. Combine the cubed watermelon, coconut milk, and lime juice in a blender. Blend until smooth.
  2. If you want a sweeter popsicle, add honey or maple syrup and blend again.
  3. Pour the mixture into popsicle molds.
  4. Insert popsicle sticks and freeze for at least 4-6 hours, or until solid.
  5. To remove the popsicles, run the molds under warm water for a few seconds.

Notes

You can add small pieces of fruit or mint leaves to the molds before freezing for extra texture and flavor.
